So, let’s get to the how-to of stuffing a meatloaf with a molten center of cheese…
First up you’re going to blend up the Moon Cheese until it resembles breadcrumbs. You can do this with a food processor, blender, or a meat mallet…you’re choice. We really love this mini food processor for small jobs like this.
Next, you’re going to mix up the beef with the crushed Moon Cheese, cooked and crumbled bacon eggs, onion, pickles, seasonings, and sugar-free Worcestershire sauce.
Here comes the key part. You’re going to take half of the mixture and place it in a 10” or larger cast iron skillet, or baking dish if you don’t have a skillet on hand (why?), then form it into the shape of a meatloaf with a divot in the center.
Fill that divot with the shredded cheese then top it with the remaining meatloaf mixture. Press it all together making sure the sides are sealed.
Next up, the sticky sweet sauce. Mix together the unsweetened ketchup, Worcestershire sauce, and brown erythritol. Pop that baby in the oven and let it do its thing.
